Although one can still find old-fashioned, manual ice cream machines that require hand churning, the use of ice and salt and labor for a few hours to create a batch of ice cream, the process of ice cream making has become more simplified and efficient than the old method.

In 20 minutes it produces 1 1/2 quarts of ice cream. After the ingredients are added, a dial is turned, the ice cream making process is started. Its bowl is a double insulated container that provides fast cooling.

The Cuisinart ICE-50bc supreme commercial quality ice cream maker is at the higher end of the price range, usually retailing for about $399. The chamber of this model has a commercial type of compressor freezer and no prior chilling in a freezer is needed. This unit comes in a stainless steel body, makes about 1 1/2 quarts of ice cream, sorbet and frozen yogurt, and takes about 30 – 40 minutes to produce the frozen treats. The ice cream making process can be controlled by the installed timer, and exact temperature control is maintained.

The disadvantage of this model is, given its price, it only provides 1 1/2 quarts of ice cream. However, since its chamber needs no prior chilling, it can be continually used to make ice cream, with no waiting.
